To celebrate the greenest day of the year, this March 17th will feature Black & Tans for $6 all Happy Hour. This mix of Guinness and Bass Ale will certainly help you get into the spirit of the day. And if you want a nibble, you can order up a plate of Irish Nachos or Corned Beef Sliders.

Chandler’s is also offering some great Irish-style menu items in the dining room, such as Potato Leek Soup or a Beer-Braised Corned Beef with Boiled Heirloom Potatoes.

We are celebrating our very first holiday season in Carlsbad and we're  pulling out all the stops, presenting a full Thanksgiving Feast with all the trimmings!

From 11 a.m. to 7:30 p.m. on Thursday, November 22, we are serving a three-course gourmet Thanksgiving Feast. For starters, there is a choice of Cinderella pumpkin and chestnut soup or spinach, roasted sweet pear and goat cheese salad with savory mustard-pomegranate vinaigrette dressing.

Then, guests will have their choice of three entrees. If they are in the mood for a turkey, we're offering a rosemary-roasted turkey with chicken andouille sausage-artichoke stuffing. This is served with mashed potatoes and rich home-made mushroom gravy, brown sugar-roasted acorn and butternut squash, seasonal cranberry Campari sauce and almond and shallot green beans. For an alternative, a main course of roasted beef tenderloin with blue cheese crust, fresh almond and shallot green beans and au gratin potatoes is also available. There is a seafood option as well, which is crab-crusted Pacific sea bass with curly Savoy spinach, mushrooms of the season and classic beurre blanc.

To wrap things up, guests will also have two choices for dessert: a sweet potato pie with spiced cream or a pecan pie with caramel bourbon sauce.

What better way to celebrate this wonderful holiday than to spend it with your loved ones and delicious food?

Congratulations to the winners of our “Name our pelican” contest. We received many great suggestions, but in the end we agreed on a favorite. So everybody, meet Carlton the Pelican.

We love the charming combination of “Carlsbad” and “Hilton” and think that the name is perfect for our mascot. We hope that everyone will stop by and say hello to Carlton the next time they’re visiting.

Two different people suggested the winning name, so we have declared two winners: Eric C. from Murrieta, CA and Dorothy K. from Escondido, CA. They have each won a $200 resort credit.

While breakfast may be the most important meal of the day, there’s no denying the appeal of a nice Sunday sleep-in. Well now, with our help, those two points will no longer be at odds.

Beginning October 28, Brunch À la carte will be served every Sunday from 11:00 AM to 2:30 PM. Each breakfast entrée is served with a choice of appetizer and a basket of freshly-baked pastries.

We are pretty well known for our breakfast and many of our popular menu items will be available, such as Huevos Rancheros, Crab Meat Omelet, Prime Rib with Poached Eggs, and the classic Three-Egg-Omelet.

Drinks will also be available for order, such as a collection of Bloody Marys, Prosecco and smoothies.

So, now on Sunday morning you can sleep late, and then enjoy a delicious breakfast with a stunning ocean view. It doesn’t get any better than that!

As the holiday season quickly approaches, Chandler’s Restaurant And Lounge is looking to make your Thanksgiving stress-free with their Thanksgiving-On-The-Go dinner.

Priced at $240, this deliciously movable feast includes a roasted turkey designed to serve a group of 16 people (or fewer, for those seeking fabulous weekend leftovers), all the gourmet trimmings, pumpkin soup with chestnuts, choice of sweet potato pie or pecan pie.

A la carte takeaway orders will also be accepted for soup, turkey, stuffing, vegetables, sauces or desserts.
