"Working with Chocolate" Masterclass with Pastry Chef Jean Marie on April 10th

Just in time for Easter, this culinary class is back by popular demand and hosted by our very own Pastry Chef, Jean Marie Verhoeven, a true expert in the world of Chocolate. Born and raised in Belgium, arguably one of the greatest Chocolate making countries in Europe, Jean Marie had access to and exposure to some amazing mentors and products throughout his career. He has been a recognized Pastry Chef at numerous top tier hotels and resorts throughout Southern California, and we are fortunate to have him as a valued partner at Cape Rey Carlsbad Beach.
Because this class will be interactive for volunteers, we recommend you wear clothing that is comfortable and easy to clean. We will provide aprons and gloves for all participants that choose to "get their hands dirty" with chocolate. During the class, Chef Jean Marie will be discussing, sampling, and teaching guests about:
- A freshly made batch of hot chocolate made from scratch (recipe will be provided for you to take home with you).
- An overview about the different types and qualities of chocolate, including dark chocolate, milk chocolate, and white chocolate.
- Lessons on tempering chocolate and making chocolate bark, chocolate covered strawberries, ganache and truffles.
- Lastly, if time, Chef Jean Marie will teach all of us how to make either chocolate pot du creme, chocolate mousse, or a chocolate tart, of which we will also include on the recipe cards for you to take home with you.
- Each guest will take home a bag of chocolate truffles and chocolate bark that was made during the class.
